Ingredients
- 1 lb chicken breast, cut into cubes
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 carrot, chopped
- 1 red onion, sliced into half moons
- 1 head of broccoli, chopped
- 1 container Grape Tomatoes, cut in ½
- 3 Tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon Italian seasoning
- ¼ teaspoon paprika
- Preheat oven to 500°F.
- Chop all veggies into large pieces.
- Chop chicken into cubes.
- Place chicken and veggies in a medium roasting dish or sheet pan and add olive oil, salt, pepper, Italian seasoning, and paprika. Toss to combine.
- Bake for 20 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice, pasta, or a salad.
